“Eid Mubarak”…
It was Eid Al Fitr in UAE starting on Friday
and since I am supposed to be on duty at work on Saturday, I have one extra day
to enjoy with my family.
We were cleaning our house and kitchen when I
saw that we still have powdered Mr. Gulaman pack so I thought of making buko
pandan. We have some of the ingredients so I give it a go.
It turns out to be yummy and we enjoyed it
with my family. Hope that this simple recipe will add sweetness in your table.
INGREDIENTS:
1 pack Mr.
Gulaman unflavored gelatin (green color)
1 liter Water
½ bottle Macapuno
1/2 can Condensed milk
2 cans Nestle cream
1/2 cup Sugar
vanilla/pandan extract (if available)
1 liter Water
½ bottle Macapuno

1/2 cup Sugar
vanilla/pandan extract (if available)
Sago/ sweet corn/ cheese (optional)
PROCEDURE:
1.
In a cooking pot, dissolve gelatin in 1
liter water. Bring to boil while mixing constantly.
2.
Add sugar and mix until well dissolved.
3.
Transfer to a container and let cool at room
temperature.
4.
Remove from mold and chop into bite
size/small pieces.
5.
In a large bowl, mix together gelatin and
macapuno.
6.
Pour in condensed milk and Nestle Cream.
7.
Mix and well blended.
8.
Chill before serving.
TIPS: You may add cooked sago or sweet corn (in
can) or cheese to add more flavor. I used some left over sweet corn; just be
careful not to put too much or it will overpower the buko pandan flavor.
You can also adjust the sweetness by either
adding more condensed milk or making it less.
